When going on a dairy free or vegan diet, cheese is one of the products that is the most difficult to give up. There are a lot of vegan alternatives such as tofu cheese, but the best one I have found so far is cashew cheese. Best of all, you can make your own vegan cashew cheese by using raw soaked cashews and herbs and it is as good as the real thing, trust me!
You can make this type of cheese by using simple ingredients: raw cashews, herbs, nutritional yeast, juice from a lemon and apple cider vinegar. Not only is it great tasting it is good for your digestive system.
Here is the recipe ( makes approximately 1 small cheese):
1 cup raw cashews
1 tbs apple cider vinegar
2 tbs nutritional yeast
2 tbs juice of fresh lemon
1 garlic clove (minced)
2 tbs water
1/2 teaspoon of each fresh herb (basil, oregano, and thyme)
Black Pepper, Salt
1. The first and important step in making a raw cashew cheese is soaking your cashews overnight. Soaking the cashews will make them soft and will give you the desired consistency when you blend them.
2. After soaking overnight, blend all the ingredients together until you get the desired consistency. My preference is to make the consistency similar to a cream.
3. Put the cream in a refrigerator and let it sit for one hour. You can eat your cheese like this or you can take a step plus and put it into a cheese cloth. The cheese cloth will soak all the moisture and your cheese will have more solid consistency. Sprinkle with more fresh herbs and salt and pepper before serving.
