Meatless Monday: Green Salad With Strawberries

Eating vegetarian food one to two days per week can be really beneficial for your overall health and for decreasing the bad cholesterol in the blood. Red meat especially is linked to increasing the bad cholesterol in the blood, so instead of eating a portion of meat substitute the protein with some seeds, cheese and fruit salad.



1 big bowl mix of greens: kale, spinach, and lettuce

100 gr blue cheese or soft goat cheese

dried cranberries/grapes

100 gr chopped avocado

 2 tbs chia seeds

100 gr pine nuts

Mix the green salad. On top add the chopped strawberries, the avocado, the dried fruit and pine nuts. Add your choice of crumbled cheese, olive oil, salt and balsamic vinegar.

Plus tip: If you want you can switch the cheese with a ”healthy sauce” to add on taste.

Choose between peanut butter-soy sauce and Greek yogurt-avocado sauce.
